Barbeque Chicken Pizza

Whoever invented barbeque sauce on pizza – thank you! I make this wood-fired oven style pie using a pizza stone & wooden peel but if you don’t have them, you can make the same recipe on a regular pizza pan. It’s a great way to use leftover chicken but I usually just cook a chicken breast and shred it using 2 forks. - Jenny Jones

Cook Time: 10 minutes

Total Time: 45 minutes

Makes: One 12-inch pizza

Ingredients:

    Dough

    :

  • 1 1/2 cups bread flour or all purpose flour
  • 3/4 teaspoon instant yeast (I use Fleischmann’s Rapid Rise)
  • 3/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 2/3 cup warm water (about 120° F)
  • 1 Tablespoon olive oil
  • Pizza

    :

  • 1/2 cup + 2 Tablespoons barbeque sauce (divided)
  • 4-5 ounces part-skim mozzarella cheese, shredded by hand
  • 1 cooked chicken breast, shredded or sliced
  • about 10 rings of sliced red onion, patted dry

Instructions:

    Dough

    :

  1. Combine the flour, yeast, sugar & salt in a mixing bowl.
  2. Add the water followed by oil, mixing until dough forms a mass.
  3. Knead until dough is smooth and elastic (2 min. with the mixer or 100 turns by hand).
  4. Cover and let rest at least 10 minutes or up to an hour.
  5. Pizza

    :

  6. Place cold pizza stone in cold oven and preheat to the highest setting (mine is 500° F) It can take 45 minutes to one hour to reach your highest temperature.
  7. Line paddle with parchment paper or sprinkle w/ cornmeal. Set aside.
  8. Combine chicken with 2 tablespoons barbeque sauce and set aside.
  9. On a floured surface, roll or press dough into a circle. Stretch it into a 12-inch circle.
  10. Place dough on paddle. Add sauce, cheese, chicken, and onion.
  11. Slide onto hot stone and bake for about 10 minutes. At about 7 minutes, remove the parchment paper and use the paddle to turn the pizza if needed. After that check it every minute.

    FINALLY! Thank you! A recipe that doesn’t start with the author’s life story! I’m gonna try this in my table top pizza oven. Thinking about adding home cured thick cut bacon and since we’re in season, fresh local corn.

    We love this pizza. I make it exactly as you direct. My daughter adds 1/2 cup well drained pineapple tib-bits on it, and that is very nice too. That girl
    (age 15) will add pineapple to just about anything. But she cooks sometimes and always cleans the kitchen well so I just eat and enjoy.

    Hi Jenny,

    I came across one of your YouTube videos and loved how relatable you are. Would using a cast iron skillet work with this pizza recipe? I’ve seen a few such recipes online and wondered if your BBQ pizza would work. Thank you for your generosity in sharing such marvelous recipes and tips. I’ve made your buttermilk biscuits using your buttermilk substitute (milk and lemon juice); the potato soup; and lemon herb chicken. All were delicious. My husband has asked for an encore.

      I made this last night using the Easy Pan Pizza recipe and swapping out the toppings for the ones in this recipe. The crust recipe on the Easy Pan Pizza is a little different but the recipe uses a cast iron pan. Came out great! I want more today but it was so good we didn’t have any leftovers 🙂

        Forgot to say that I added a sliced poblano pepper (because I already had one in the fridge) on top of my bbq pizza and really liked it.

        This pizza crust is AMAZING, super simple to make. I love making it ahead of time and putting it in the fridge, still comes out great. A definite keeper in my recipe repertoire. 🙂

          I bake my pepperoni pizza at 425 but a lot of other pizza recipes suggest 450. They say the hotter the better.

          I did not like to cook until I found your videos on youtube and your wonderful recipes. Now, at 50 years old, I am enjoying cooking and baking! I’ve made the marble loaf cake, the chicken pot pie, and the whole wheat bread. Love them all! I am wondering though, can I substitute whole wheat flour in this pizza dough recipe? Thank you for your help!

            Try adding some apple butter to your bbq sauce….it’s super delicious. My daughter put me on to this. I usually add 1/3 of the apple butter to 2/3 of the bbq sauce.

            I know using pizza stone is the best but i don’t have it, can i use wooden cutting board to replace the pizza stone? What is your best suggestion? If can, place it in the middle rack or bottom of the oven? Preheat timing is the same?

              You can not use wood for this because it will burn in the very hot oven. However, you can make your own pizza stone using unglazed tiles. Here they are called quarry tiles or you can also use terracotta tiles (what planting pots are made from). They should be available at a hardware store and you may need more than one. They must be plain, unglazed tiles and you wash & dry them first, then line your oven rack with them, usually two rows, three to four tiles on each row depending on the size of your oven and the size of the tiles. You line them up close together and touching, leaving an inch or two of clearance on the outer edges for air circulation. You can see more on how people make their own on the internet. Try searching “homemade pizza stone” or “how to make your own baking stone.”

                  I preheat my oven & pizza stone for about an hour – no less than 45 minutes before baking the pizza.

                    Omg!!! I just made homemade pizza!!! It was delicious and the crust so simple!! I am hooked on your recipes!!! Have already made pea soup!! Caramel corn (2 times) ate the first batch myself!! And the peanut butter cookies!! Love your website. You are so funny!!

                      You can bake it the same way I make the pepperoni pizza – on a pizza pan. Both the stone method with the pizza peel and the other more common method of using a round pan (preferably with holes) both make good pizza.

                      This is realy good. I was a little bit sceptical because I’m not the big fan of BBQ sauce. All the more there are so many of them that you really do not know what to choose if you do not know them well. I picked just original BBQ sauce and the pizza came out delicious. Very tasty combination of flavours. And ” easy pizza dough” is just amazing. So easy to do. I did not even bother to use a mixer. Just mixed it up with the spoon and then kneaded 100 turns which was a pleasure to do because the dough is very easy to work with. Thanks!!!
