2 cup vegetable stock, divided

8 ounces day-old vegan Italian bread, cubed

½ cup rainbow carrots, diced

½ cup celery, diced

1 cup leeks, diced

4 ounces mushrooms, sliced

2 tablespoons sherry vinegar

Sea salt and black pepper, to taste

2 tablespoons maple syrup

6 ounces roasted chestnuts, peeled

3 tablespoons chopped fresh thyme

1 tablespoon chopped fresh sage

1 tablespoon chopped fresh rosemary

Directions

1. Preheat the oven to 375 degrees F. Lightly grease a large baking dish. Set aside.

2. In a large bowl, whisk the arrowroot flour, 2 tablespoons of the olive oil, and ½ cup of the vegetable stock until the flour is dissolved.
